What’s Cooking~~Easy Blackberry Raspberry Jam (A Quick Taste of Summer)

With summer comes all types of fresh berries today we have a wonderful taste of summer that will be quick and easy. This taste combo will be the pride of your table this summer.

Easy Blackberry Raspberry Jam (A Quick Taste of Summer)

Ingredients

1 ¾ of each Raspberries and blackberries rinsed and dried

2 ½ granulated sugar

5 tbsp real lemon juice (Natural pectin)

Instructions

Put the raspberries, blackberries, sugar and lemon juice into a medium to large sauce pan.

Placing pan over a low-medium heat, stirring occasionally, until all the sugar crystals have dissolved.

Raise the temperature slightly and bring the mixture to a rolling boil and continue to boil for 7 minutes.

Remove from heat, put a few teaspoons in a chilled saucer then place the saucer in fridge for about a minute (This is a tester)

You will know that your jam is done, when tester comes out of the fridge and has a gel like texture when your finger or spoon runs over it.  If the jam isn’t ready then continue boiling for another 2 minutes at a time and re-test until ready (Average time is about 9 to 11 minutes total boiling).

Ladle or pour the jam in sterilized jars then sealing with lids immediately – makes 2 (450 ml) jars

Once cooled store in refrigerator unopened should last up to 6 months in the fridge. Open jars will last about 30 to 45 days.

This jam is delicious treat for toast, ice cream, or an added flavour to your yogourt.
